Right you are Data, I have never seen stuff like yours anywhere else on the web really...and actually has inspired me, next time at the park, to try and catch some of this kind of stuff heh...so apologies for blatantly ripping off your idea in advance...but definitely some stuff I can think off I have never seen photographed I'd like shots of. So thanks for inspiring me as well!
oops forgot to mention I love taking pictures of the canoes.
For me, it's Paradise Pier. I've take a ton of pics of it and I still feel the need to take more!
I also love to take pics of The Haunted Mansion (I'm convinced I've yet to take the ideal picture of it), The Matterhorn and Main Street.

It's a surprisingly difficult subject to capture in an artistically ideal way. Looks beautiful in just about any circumstances, but getting the photo itself to look great is tricky. (Not that I've tried nearly as much as many others have, yourself most likely included. My photographic attention when it comes to HM has mostly been in the areas most people ignore, as usual, and I'm usually trying to indiscriminately capture as much visual information as I can, not make it aesthetically pleasing.)

The Hollywood Tower Hotel. An Attraction that combines my unhealthy affinity for The Twilight Zone, Hotels, and vintage service uniforms. Must. Have. The. Bellman's. Uniform...
Um... anyway, that ride is tops for the riding and the photo-taking-of-ery. I also like taking a photo just as you're going down the final drop on Splash Mountain. If I can manage it, I'll try to take photos of my riding partner's expressions as the ride unfurls (outdoor rides / sections only, of course.)
