Might be helpful to say where you've seen these. I can't say I've seen them much less bought a pair.
My wife has bought a white and a red pair. Not sure where she got each of them but we have seen them at the Emporium, World of Disney, Walmart (had them for a few months), Claire's also had them for a bit. You just kinda have to keep looking. They show up every now and then outside the resort.
Our revels now are ended. Oh, I saw them inside Disneyland before...they were in a little shop that sold clothes...

I purchased some at the Emporium. They had them in both gold and sterling silver.
In terms of the stones, they came in birth stone colors. Of course, this was a few months ago, but I don't see why they would be totally gone. You would probably also be able to find them at New Century Jewelry

No rhinestone, but some pretty nice stuff, mostly CZ stones, real gold and sterling silver. There are many, many other jewelry items here, too. This is real jewelry, not costume, so prices are around $40 to $90.

there's a great selection of disney related jewelry at the jewelry store on main street, from real to costume to little girl's plastic. prices vary but for stuff that's say, claire's quality, in DL it's a few bucks more expensive all around than what you'd expect to pay in claires. you can sometimes find an even bigger variety of the same jewelry in world of disney. there's a lot of designs that are pretty simple and classy. i know you'll find a few different kinds of mickey shaped earrings in either place.

They earrings are CZ, in sterling silver, and sell for $7.99! I bought them in red, clear, and light Pink.
Ross also had other sterling Disney jewelry as well, I bought a pair of earrings that say LOVE, with the 'O' being Mickeys head, I also got the matching necklace $7.99 & $8.99 each.

At the park:
WoD has quite the selection in their jewelry section...
Emporium has a few...
Main Street shop to the north of the emporium that has jewelry has a couple and so does Star Trader...
If I recall correctly, I saw red, pink, clear, lt blue, dk blue, green... pretty much all the birthstones...
You can get one pair for like $10.00 or a set of three pairs (the other two are silver tone ears or ears and hoops) for $12.00...
they do have a higher class section in the jewelry store I believe for $25.00 (but those are actually becoming less and less availability wise)
and the giftshop at GCH has some - but they are a bit more pricy... I don't think they are actual diamonds, but with the price they probably should have been!
Outside the resort:
if you have a Mervyn's store near you - I got some REALLY nice ones there - regularly $50.00 got them for $15.00! It's a regular sale they have there at their jewelry counter - not the "kiddy" type either, actual adult jewelry - you may have to ask where it is - it's not in the same location at my store as the disney kids stuff. I got clear, I know they also had two shades of blue the last time I was there.
I ended up getting a pair of sterling silver mickey mouse earrings at the jewelry store inside the park, I believe they were $35. My friend got a pair of the gold mickey mouse earrings, they were about $13.00.
