Re: A Little Vermin "Activity" with your Monte Cristo?

    For what it's worth

FC39 - Evidence of Vermin Activity/Presence of Animals
Observed a few large live flies in the kitchen area. A thorough inspection for vermin activity was conducted. No further
evidence was observed. Use any approved method for eliminating vermin from the food facility, and thoroughly clean
and sanitize all affected surfaces. Construct, equip, maintain and operate the food facility so as to prevent the entrance
and harborage of animals, birds and vermin including, but not limited to, rodents and insects.
So there's the extent of the vermin portion of the report, not mice. And while I'm sure the major ones have merit to them, it's to the extent of things like
    FC08 - Improper Sanitizer Concentration/Method (CA Retail Food Code 114099, 114101, 114117)
At the main cook's line, observed an employee wipe the food contact surfaces with a wet wiping cloth without the aid of a
sanitizer. A sanitizer bucket was set up, measuring 200 ppm quaternary ammonium. Discontinue this practice. This
facility is using 150 ppm quaternary ammonium sanitizer according to the package label. Each day prior to preparation,
set up a sanitizer bucket with either 100 ppm chlorine, 200 ppm quaternary ammonium or 25 ppm iodine to hold the
wiping cloths. Store the cloths inside the sanitizer solution when not in immediate use. When a towel is needed, wring it
out, use it, and then immediately return it to the solution between uses. The violation was corrected on site by an
employee sanitized the food contact surface with the approved quaternary ammonium sanitizer.

The latest health inspection for the Blue Bayou was on December 8, and only two minor violations are recorded, neither of which were about vermin activity. Here's a PDF of the complete December 8 inspection report: http://foodinspections.ocgov.com/foo.../DA3107745.pdf

Re: A Little Vermin "Activity" with your Monte Cristo?

In another thread tonight I posted how the Orange County Board of Supervisors recently voted against a requirement for Orange County dining establishments to post a letter grade from A to F, similar to what they do in most of the surrounding counties.

It wouldn't surprise me how much influence Disney had on this vote. For sure, if it passed I wouldn't be surprised if Disney would have been forced on posting a grade of B or lower on some of its establsihments.

Downstairs in NOS there's a restroom opposite the kitchen. The door separating them is supposed to always be closed but it hardly ever is. I can't imagine the airborn "items" going into that kitchen.

Re: A Little Vermin "Activity" with your Monte Cristo?

The vermin were in the 8/26/2008 AND 10/26/2007 report.

EDIT: Holy @#($!! The DISNEYLAND BLUE RIBBON BAKERY/CARNATION CAFE is way worse.

Food Protection Program - Food Facility Inspection Details

wow, french market had a real bad one on 2007:

FC14 - Major Violation Adulterated/Contaminated Food or Unapproved Food Source

This subcategory will be marked if food is contaminated and is an immediate risk for injury or illness, or when food is from an unapproved source.

Examples of unapproved sources are: foods prepared at private homes, or a restaurant without a valid Health Permit.

    Examples:
    • Severely dented or swollen canned food products were observed on the supermarket shelves for sale.
    • Tortilla chips that had been previously served to other customers were re-served.
    • Cockroaches or rodent droppings were observed in food products.
    • Raw meat blood was leaking on the vegetables from storing meat above the vegetables in a cooler.
    • Chemical container was used for storage of food.

That is not a list of what they found in the report. That is a list of examples of possible violations for that code. To see what actually got found you have to click the pdf for the report, which is no longer even provided for that french market 2007 checkup.
