ISO definitely can be ok to use. I have two DSLR cameras, a Sony A-350 and a Canon Rebel XSi. The highest I ever could use ISO with the Sony was 400. Any ISO higher was way too hard to remove all the "noise" in the picture. With the Cannon, I am able to remove the "noise" a lot easier.
With the dark rides, I definitely recommend using ISO so you can use a faster shutter speed (which gets rid of blurriness). I used a 1/60 shutter speed on "It's a Small World", which required me to have a steady hand.
WOW!!! Okay, now Im jealous... everyone that I know that has a Canon Rebel has SOOO GOOD PICS!! And I love the way you make them different with different angles... and they are soo crystal clear! And we all know it's hard to take good clear shots in a moving vehicle without using flash... indoors!
