Eo/eos is "dawn" in Greek. Also used to indicate "early."
(Captain EO brought dawn to night, light to darkness.)

I found this:
Michael said himself in his book "Moonwalk", that the name "Eo" came from the Greek goddess of dawn, or the Greek word for "dawn". Even two thousand years ago, there were different Greek dialects, so while I too have heard the form "Eos", the goddess could very well have been called "Eo" in another dialect. For example, Mother Earth was called both "Gaia" and "Ge", so there were different forms of the names of the gods. And even if the name would be misspelled, it still is the goddess, or the greek word for "dawn", that Captain Eo's name refers too.
Captain GE just doesn't have the same ring to it. It sounds like a mascot for the conglomerate that sponsored the Carousel of Progress.

I think that could have been the name of the ship. I'm not sure, just a guess at this point.
I thought it was a sour cream substitute. Oh wait, that was Captain IMO. Sorry. The ship does kinda look like a baked potato. Sorta.
