Another one for Big Thunder. Far more thrilling at night time, in my opinion.
I got the chance to ride Screamin' at about 8:15pm this summer just before WoC and they shut the ride down, and it was superb! Quite different riding it at sunset than during the day.
I also have to agree with the Haunted Mansion and Pirates comments. They do seem to feel more real or something during nighttime.
Never done Splash at night...that's one I'll have to try.
Definately Big Thunder and its even more fun during the fireworks. One time my sister and I timed it so we would ride it specifically during the fireworks. Matterhorn was also fun when I rode it during the fireworks one time and seeing the fireworks go off from the castle, way cool.
Also I've always preferred storybookland at night when you have all the lights in the windows lit up.
I'm surprised that no one has mentioned the Disneyland Railroad. To me, the journey at night is so relaxing, it's one of the better night rides.
I'm so surprised no one has mentioned the teacups. They are so much better at night! You can see the lights much more vividly, and there's nothing like getting the teacup spinning really fast then looking up and seeing the blur of all the lights! That's one ride I will only do at night.
I actually enjoy all of the rides more at night than during the day
Big Thunder and Matterhorn for DL and CS for DCA
It's a tradition sort of that whenever we go to Disneyland together till midnight, Splash Mountain is the last one. I love riding it at night, especially on the big drop and outdoor segments

Overall of the rides are better at night!!! My favorite time at DLR is at 8pm til closing. I love seeing the lights, i love seeing all the exhausted/tired/sleeping kids and as well adults after a long fun day at DLR!!! Overall DL feels more magical!
My favs at night:
BTM- is it just me or doesn't it feel like IJA at night? LOL
HM- feels more scarier at night
POTC- especially during fantasmic, when it's like a 5 min wait
Jungle Cruise- more realistic. I happen to have funnier skippers at night.
Tiki room- when all the tikis lit, with a dole whip in hand (of course)
FL dark rides- feels more magical at night. your for sure going The andersons once again trying to ride PPF last. lol
CS- to bad now it's rare to do this at night thanks to WOC.
TOT- Scarier and the storyline makes better sence at night like POTC ,HM.
Everything in Disneyland is better at night! It is just so much more magical! As far as rides go! Big Thunder, matterhorn, HM, PoTC, Storybook Canal, and Astro Orbitors (especially during fireworks) and Splash mountain (as long as it is not a drenching trip).
