Screamin' is an awesome ride at night. Tower of Terror is cool at night as you don't get blinded by the sun after the dark elevator shaft.
My personal favorite at night is Thunder Mountain though. Especially at the very end of the day. Haunted Mansion is a great ride to hit up right at 11:59 so that when you get off, the park has been closed for nearly 10 minutes and the area is devoid of people.

As mycroft said, Thunder Mountain is pretty cool at night, especially if it's during Fantasmic, and you can listen to the show, and catch some glimpses of it.

Matterhorn because the less you see, the more fun it is.
Haunted Mansion because the more you see, the more fun it is. That is, you're eyes adapt better to the dark interior so you can see more, especially in the graveyard.
Thunder Mountain is SO good with the fireworks exploding overhead!

The old Rocket Jets from their position way up high. You can see all the lights of Tomorrowland and the rest of the park. Hopefully, this will be a view we will someday be able to see again.

I think Matterhorn is the best ride at night because it seems completely different from the ride in the day time.
My best night ride ever was the Matterhorn during one visit in the '90s, and I've always wondered about it. Have they ever deliberately filled up the caves with dense fog, or was that just the weather I was lucky enough to experience that night? It was so cool. In my memory I could barely see my hand in front of my face when we were inside the mountain, then we'd go outside, and it would be clear again. Then back into the dense, white fog.... It was nifty.![]()
Another vote for Big Thunder. Awesome at night (the ride I mean, not me).
Matterhorn, for the cool night air whipping by in the caverns, and Jungle Cruise as it is a lot more atmospheric and great ambiance after dark: feels like a real jungle, more isolated and mysterious.
I always try and make Haunted Mansion last ride (or two, or three) of the night. Nothing beats walking out of the crypt and along the river, through a mostly empty New Orleans Square and Adventureland with all the ambiance music and sounds still playing....

I LOVE the Jungle Cruise at night! All the tableaux look so different, and much more real!
Because I have this thing where my eyes adjust very slowly to changes in light, all the dark rides are better for me after dark, too.
Someone told me a few years ago I just had to go on the Storybookland Canal Boats at night. I did. It was the same boring ride - just darker.
