While the Haunted Mansion is my love, I'd have to say by far my favorite would be would be the very first year of Haunted Mansion Holiday, I find it beautiful and macabre. Much better than the one they have now.
The old American Journeys soundtrack is still near and dear to the ticker (even like the queue intro they played as you walked into the theatre). Also loved the "Golden Dreams" cap-off in the prefurb version of Lincoln. Was fortunate to find all of these online.
Also a big fan of Jerry Goldsmith's 'Soarin' score.

And back in the day, I always heard the soundtrack to America Sings going through my mind for the whole 1 hour drive back to the Valley.

Wow that's hard to choose. Fantasmic would have to be at the top with Haunted Mansion and POTC. Soarin is also up there. For WDW it would be Illuminations at Epcot. The song "We Go On" specifically. I know this is a Disneyland post but there is a ton of good music in all the parks.
