It really depends on the person since "Caribbean (the Disneyland way)" can really be spelled either "Carribean (with two "r's" and one "b")" or "Caribbean (with one "r" and two "b's")."
So, if you spell it Carribean, it should naturally, when talked out, should should like CARRIB-ean.
If you spell it Caribbean (like Disneyland's ride), when talked out, it should sound like Ca-rib-BEAN.

I agree the proper use of the word should be "Caribbean," BUT you can say it the other way as well on Microsoft Word and WordPerfect .
