Didn't you know? The entire show's soundtrack was lifted verbatim from an old "Sing Along with Mitch Miller" album...
Seriously, they recorded the entire soundtrack specifically for the show in local studios, probably at the Disney Studios lot in Burbank. And knowing Disney, they have the original session recordings stashed in a vault somewhere, down to the individual voices and instrument tracks if they ever need to re-mix something.
(Although I hope they properly converted it all to digital media before the old 24-track mag tapes disintegrated - some of the old oxide binders didn't have long term stability on the plastic backing, and the tapes start shedding oxide when played unless you bake them before playing. And even then, it's not a given that they are salvageable. And then you have to get a 50-year-old tape deck into running condition to play them...)
Several of the voice actors were already long time park regulars like Thurl Ravenscroft and Wally Boag. And in LA you can find players for every genre imaginable for session work - People who can do Polynesian drums, lap steel guitar, ukeleles and the like? A professional chorus of singers who can wrap themselves around Hawaiian lyrics properly? No problem...

There's an old Annette Funicello LP called "Hawaiiannette" that was recorded in 1960 (got some great cheesy but fun "Hawaiian" tunes on it, BTW ...and some of the background music, voices and riffs sound like the same crew that later worked on Tiki Room. Especially in the song "Luau Cha-Cha-Cha"...which also appeared as a single.
Wouldn't be at all surprised if the same team worked on both.
