If it's not such a big deal to CM's than why are they so adamant about there being no physical documentation of these areas whatsoever?

I think they were speaking about it regarding why people find it fascinating to take pictures of it, or to talk about it, etc. For CMs, it's old hat because they have already seen it, they hang out there, etc.
I don't think it has anything to do with why CM's don't want documentation or pictures of backstage. And I am sure that most CM's could care less personally if somebody sees backstage or not, they are just being told by superiors that guests should not be allowed to view it, take photos of it, etc.

Disneyland doesn't want photos of backstage because it kills the magic. There's nothing special back there you're not missing anything.
