Minnie's Tasty Holiday Hot Valrhona Chocolate With Vanilla and Cinnamon

1 qt. Whole Milk
2 each Vanilla Bean, sliced and scraped
3 each Cinnamon Sticks
8.5 oz Milk Chocolate Genache (see recipie below)
11 oz Dark Chocolate Genache (see recipie below)
Combine milk, vanilla beans, cinnamon sticks, and bring to a boil, turn down to a light simmer. Let steep for 6-10 minutes. Remove cinnamon sticks and mix the milk and dark chocolate genaches. Keep warm.
Milk Chocolate Genache
Heat 6 oz heavy cream to a boil, then take off heat and pour over 8 oz of milk chocolate (36%). Mix well, set aside, keep warm.
Dark Chocolate Genache
Heat 6 oz of heavy cream to boil, take off heat and por over 10 oz semi-sweet dark chocolate (58%). Mix well, set aside, keep warm.
SO...even if you can't make it to the resort, you can still enjoy a bit of Disneyland Christmas at home.
