I can't seem to find any great info on what type of crowd level I should expect.

Is this week traditionally packed? Or will crowds not be a problem?

Oh you'll be fine. The first week after all the holiday crowds leave, and right after the holiday season ends.
Mansion will be closed, though.

Take a look at the calendar on the official Disneyland website. If there is an earlier opening/later closing time, then it's a good indicator of how busy Disney is predicting crowds. Check out other months to see how the times are up and down. Have a great day!

Its a monday and the holiday crowds are gone. People are in school and work now.

Tomorrow might be good or bad. Good cause it's after the holidays but bad because everyone might be thinking that same thing you are and think it'll be slow.

There are also Fantasmic! shows all this week. Mostly for private parties, but they will be shown at 7:30 (7:00 on Thursday) and they are listed on Disneyland.com. So that means they will be open for guests who are in the Park before it closes at 8:00.
