Alrighty, lets see what I can post in here about the portraits... Let me quote Chapter 13 up there one by one and I will add whatever info I know.
Alright, first we have the Hatchet Man/Ghost Host. This painting wasn't envisioned to be a changing portrait. Its just an alternate version of the one hanging in the Corridor of Doors in the Disneyland mansion. Due to the fact that the Disneyland one isn't a closeup from the bust up, it would have been hard to stick into the hallway. So, this alternate version was made.
The bearded man with his fingers folded together was called Rasputain. This was a joke about him and his whacky eyes. The original portrait (like a lot of the original concepts), made more than 2 stages. This one had 4. In each stage his eyes would get larger and larger eventually filling up the entire frame.
The witch does indeed become a Goat Headed Demon. Her concept is called the Witch of Walpurgis. I have a posting about the symbols in the painting on my blog somewhere in there... LOL.
Jack the Ripper is pretty much as you described it.
The choking couple is also correct.
The woman with the Opera Glasses wasn't a changing portrait. There was a concept where she was a similar character and was actually a concept for the Bride at one point in time. She was a lot angrier looking though.
The Mariner was never to be a changing portrait. There is a concept piece by X. Atencio of a Mariner coming back to port covered with a lot of gross dead things, such as starfish, dead seagulls, etc. But wasn't a changing portrait.
Here is the first and last stages of The Burning Man you mentioned. This painting had either 6 or 7 stages. Each stage a little more and more flame would appear. Until he was no more and indeed the contract said SOLD.
There were a TON of changing portrait concepts. Roses wilting, Fruit rotting, the mythological Daphne, etc.
But here is a new mystery for you.... does anyone know what THIS was to do? <Insert Evil Grin here>

In reading the description, I think HBG was included because he was a Davis watercolor original. I mean, yeah, they could've just as easily included something else, but I think that it's all it is. Everything else supports the "bringing-him-back" theory for the most part though!
I have always been fascinated by the changing portrait concepts. My favorite is opera-glass lady. I think it's because of the cat!

I've never seen or heard of that last guy before, but I recognize him: It's Guy Fawkes. You can see the portrait of him that this Disney one was obviously based upon, and read up on the guy here: http://en.wikipedia.org/wiki/Guy_Fawkes
He and his co-conspirators came to a pretty grisly end, so whatever the changing portrait changed into, it wouldn't have been too pretty!

And thanks for the pics! I really liked the greedy man/devil one! Also, I didn't realize there were a lot more then what I've discovered! Of course, that means I'll need to work my way to find them all.

Here is the answer to Guy Fawkes....
He never changed! There were a lot of concepts for changing portraits, but this was... A TALKING PORTRAIT! Thats right... a rear projected talking portrait! Other portraits even included Ivan the Terrible.

Oh dear god.... its like Conan! Or Letterman! Or whoever the heck does that gag now!
But from what I understood, it was more of an animated piece. They just did it all by hand with Disney Animation. So far we have... Changing Portraits, Staring Portraits and Talking Portraits. There were a few other portrait ideas listed in some effects sheets that Yale wrote out. But to get the idea of that, just watch Harry Potter. The idea about being able to go portrait to portrait... yep... they thought of it...
