Very true, far too many eateries when the park opened.
But I'd still like to see a Chinese restaurant. Maybe move it. Place it in the San Francisco area facing the lagoon. A sit down place, with maybe a take out window located on the side for quick bites (a-la Ralph Brennans).
I was pretty amazed that a Disney theme park could actually have good Chinese food, especially considering how much I disliked what they passed off as Chinese food at Hollywood and Dine.
Lucky Fortune wasn't open for very long, but it had actually already started to decline before they finally shuttered it. When they had noodles and the dim sum platter, it was so incredibly good. But then they decided not to have it open even during peak lunch times on busy weekend days, and then they wondered why no one came. They took away those items and only left teriyaki bowls (not very good ones at that) and egg rolls. And then it finally closed.
