    Get the no boil lasagne noodles and layer away with ricotta and sauce! and spinach and cooked sausage if you wanna get really insane with it.. easy!

    wicked good idea.. not sure i want to cook tonight though. It isn't suppose to storm and stuff till tomorrow night so my though was save the cooking skillz for tomorrow night and go easy way out for dinner....i dnt know, the chicken bruschetta pasta looks and sound soo good at Fridays.. i havnt eaten all day so even a bag of moldy bread looks good to me right now..LOL

    well...time to head on home. Its a stay in night. Seems like all this week I've been doing something in the evening. Tonight, I stay in. Maybe watch the Wreck it Ralph DVD I got!

    Some assembly required and casserole cooking intimidate me. Boil, broil, grill, bake and crock pot are more my cooking speeds.

    If you have this stuff, these beef enchiladas can be made in 15 minutes.

    Ingredients:
    1 lb of ground beef
    1 onion chopped
    1 14oz can refried beans
    1 Tbsp lemon juice
    1/8 tsp garlic powder
    1 tsp salt(I usually leave this out)
    1 package of dry taco seasoning
    1 pack of 8 or more 8" or 10" tortillas
    1 10oz can red enchilada sauce
    2 cups of shredded cheese

    1. In a large flying pan saute the beef and onions together for about 4 minutes, or until browned then drain as much fat as you would like or leave it in the pan. Keep beef and onion in the frying pan.
    2. Add to the frying pan, on high heat, the beans, garlic powder, salt and taco seasoning.
    3. Preheats the tortillas in a paper towel for about 2 minutes in microwave.
    4. Fill and roll the the tortillas and place into a 8"x8" or 10"x10' greased baking dish(whatever fits in the microwave)
    5. Warm the enchilada sauce in a dish then spoon over the rolled tortillas.
    6. Cook for about 5 minutes.
    7. Top it with the shredded cheese and cook another couple minutes until the cheese is melted.
    8. Let cool and enjoy.

    Top either with copious amount of shredded lettuce and chopped tomatoes or even salsa, as they cool, to add some vegetable content

    I made pastrami sandwiches for dinner - basically a grilled cheese but with provolone, pastrami, and mustard. Super easy and really yummy!!

    We are trying to eat out less, too. It's so hard to resist, sometimes!

    Parmesan-Crusted Chicken


    A sautéed chicken breast basted with Caesar Vinaigrette, then finished with a Parmesan crust. Served with three cheese tortelloni tossed in spinach Alfredo sauce and a side of fresh tomato mozzarella salad.

    What kind of canned red enchilada sauce do you like? I haven't had good luck with the canned stuff. Always tastes a bit off to me. I haven't tried enchiladas at home in years because of that reason, even though they're one of my favorite Mexican dishes.
