I need to make a side dish for Saturday - any quick and easy ideas. I'd like to use what I already have but I don't have much LOL!!!
Maybe something with rice or veggies? There will be 8 of us.

I always get asked for the recipe when I bring these. Go easy on the orange peel or it gets too orangy.

potato bake!!
thinly slice potatoes and layer in baking dish. Mix a container of cream with an envelope of onion soup mix (like lipton) and some garlic. Pour over potatoes and top with cheese. Bake at 350 until potatoes are tender
I love twice baked mashed potatoes.
Cook 5 pounds of potatoes and mash by adding sour cream and butter to the consistency you like. This can be done several days prior to the meal.
Cook and crumble 1 lb of bacon. Sit mashed potatoes and room temperature for about 30 minutes. Stir 1 cup sour cream, 1 cup shredded cheddar cheese and the bacon into the mashers.
Bake at 350 for about 30-35 minutes until warm.
Nummy!
spiffed up mac & cheese.
What's the main dish?
Patty, i haven't had twice baked potatoes in forever, that sounds so good!

I don't know if you have enough asparagus for 8 people on hand, but I'll chime in anyways.
Rinse the asparagus and heat some olive oil in a frying pan until hot (I usually break the asparagus into two or three pieces). Add some chopped garlic (Did I mention that I LOVE that pre-minced garlic?! It's awesome) and then add the asparagus. Next, add soy sauce, orange juice, a little orange rind if you want, a dab of butter and about a handful of chopped pecans. Add a splash of O.j. or a bit of olive oil if it looks like it needs it. Cook on medium until the asprargus is done enough for you.
Dang it LB! Now I'm hungry! *scrolls back up and looks a the potatoe recipes*
I don't know the main dish. The hostess is making it and someone is also bringing sandwiches.
I have like no ingredients anyone's mentioned LOL
But I do like the idea of spiffing up veggies 'cuz nobody else will bring any.

I have a great chinese chicken salad - it does have a tsp of accent, but it can be left out if you're paranoid about that kind of thing.
Dressing
3T white vinegar
2T sugar
1 tsp accent
2 tsp salt
dash pepper
1T Olive Oil (or sesame oil - if you like a little more kick)
1 head of shredded ice berg lettuce
4 or 5 chopped up green onions
2 dozen fried wontons wrappers (crunched up)
1 can of chicken (or 2 boiled chicken breasts - shredded)
Toss the lettuce, green onions, dressing and cooled chicken. I wait and add the wontons just before serving so they don't get soggy. Just crush them so you have big and little pieces.
Will trade husband for Disneyland and DCA Pins!
