Anyone Have A Great Recipe For Fried Chicken?

I'm throwing my mom a party to say thank you for everything she's done for myself and the whole family lately. She really enjoys fried chicken, mashed potatoes and more country stuff.

Does anyone know any GREAT recipes for fried chicken or other country entrees?

chicken, eggs beaten, dip chicken in egg mix, then in flour/salt/pepper mix, and fry

people try to complicate food, when the best recipies are the simplest.

and honestly, you can even do away with the eggs is you can find a better sticking agent.

my mom and grandma always fry in a skillet with veg oil. Lately, I've been using Canola Oil with the same results.

cover it with a lid to keep the chicken from drying out.

There's a recipe for chicken nuggets that are excellent on Bisquick boxes .....that's kind of countryish...I think...especially if you made some biscuits too!

i just looked at deens recipie and the only thing she does different then me is no salt and she adds water to her egg mix...

I think it's better ith the salt.

^^^Yep, this is basiclaly what I do. I fry it in a pan (not a deep fryer). I usually fry in either canola oil or if I am using cutlets I use 1/2 EVOO and 1/2 butter. Another option if you want it crispy is to use bread crumbs (so dip in egg then bread crumbs), but that will work better with cutlets than say a leg or thigh.

depends on which one you look at

she has about 5 variations. the first is what i described

then yours, then one subed milk for water

one added garlic powder to the flour and the last was very complicated.

yeah, I ahve only made one paula dean recipe and it was a soup. She makes really fattening food and she loves to fry stuff and add lots of butter..., but she does do southern cooking and she's fun to watch.

Show: Good Eats Episode: Fry Hard 2: The Chicken (Fried)
1 broiler/fryer chicken, cut into 8 pieces
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
Flour, for dredging
Vegetable shortening, for fryingPlace chicken pieces into a plastic container and cover with buttermilk. Cover and refrigerate for 12 to 24 hours. Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.
Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season chicken with this mixture. Dredge chicken in flour and shake off excess.
Place chicken skin side down into the pan. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)
Drain chicken on a rack over a sheet pan. Don't drain by setting chicken directly on paper towels or brown paper bags. If you need to hold the chicken before serving, cover loosely with foil but avoid holding in a warm oven, especially if it?s a gas oven.

I am a fan of Martha Stewart's fried Southern chicken. If someone likes it crispy then I will do the final coating of crushed frosted flakes then fry the pieces.

Will do, the deep fryer I bought has a lid anyways so it should work out great !
