    Disney Gingerbread Dough Recipe

    Hello and Seasons Greetings to all! Last year when I was an AP, the Disneyland site had their gingerbread recipe up, so I saved it and printed it out to make cookies for Christmas. This is the very recipe used to make the gingerbread house in HMH and all the gingerbread creations in WDW.
    May I just say, these are the best cookies EVER and I wanted to share the recipe with whoever may want it or who hasn't yet seen it. I'm making them again this year and I'm excited. I think I may double the batch since I'm making them for so many friends.

    Gingerbread Dough

    Ingredients:
    6 cups Flour, all purpose
    1 teaspoon Baking soda
    .5 teaspoons Baking powder
    1 cup Unsalted butter
    1 cup Dark brown sugar
    4 teaspoons Ginger, ground
    4 teaspoons Cinnamon, ground
    1.5 teaspoons Cloves, ground
    1 teaspoon Black pepper,
    1.5 teaspoon Salt
    2 each Eggs, large, whole
    1.5 cups Molasses

    Instructions:
    1. Pre-heat oven to 350 degrees.
    2. Sift together flour, baking soda and baking powder in a large mixing bowl
    and set aside.
    3. Add butter and brown sugar to an electric mixer and cream until fluffy.
    4. Mix in spices and salt. Beat the eggs and molasses.
    5. Add flour to mixture. Mix on low speed until thoroughly combined.
    6. Divide the dough into thirds and wrap in plastic. Place in the refrigerator
    and cool for at least one hour.
    7. Sprinkle flour on a flat surface. Roll out the dough until it is about
    one-eighth-inch thick.
    8. Cut the dough into festive holiday shapes and place on a non-greased
    baking sheet.
    9. Place the sheet pans in the refrigerator and cool for about 15 minutes.
    10. Bake for 15 minutes or until the gingerbread is firm in the center.

    Just out of curiosity, is this the same recipe that is used to make the Mickey gingerbread cookies as well? Those cookies are the softest, most delicious gingerbread cookies I have ever had and I just want to be sure of the recipe before I pop a batch in the oven.

    I'm not certain but I would assume that the recipe is the same for all gingerbread items within the resorts. You won't regret making these, they are the best cookies and I look forward to making them every year for decades to come! Icing is optional, the recipe actually came with an icing recipe as well which i didn't post, if you'd like it, let me know.

    About how many cookies does the gingerbread recipe make? Six cups of flour!! Wow! By "1 cup of unsalted butter" do you mean two sticks?

    Did anybody end up making this recipe? Mine turned out funny this year, they do not taste good. I was wondering if it may be that last year I ran out of molasses so I used some of it, but substituted the rest with maple syrup. Or if our flour may have been bad because another recipe we made didn't turn out quite right either. Both taste slightly bitter and the gingerbread is absolutely retched, probably because it calls for 6 cups of flour, so if the flour was bad....that would make it worse. Anyways I'd love to hear feedback!

    Sorry Wanda I didn't see this.

    The recipe makes about thirty something cookies. And yes that's 2 sticks of butter, I just copied and pasted right from their recipe sheet.

    If you would still like the icing recipe, PM me and I'll send it to you. I don't know how many people will actually make gingerbread after Christmas. haha

    This year the Gingerbread men at the Market House on Main Street in Disneyland were absolutly to die for. I have never had gingerbread cookies this good before even at Disneyland. Not too soft or too hard, just perfect. And the ginger flavor was perfect, neither too sweet or too bitter. And they had chocolate icing for hats and boots and three white and yellow icing for buttons. So good. Is this the same reciepe for this years cookies as they seem very different from the last ones I had. Also I would love the icing recipe for this as well. Thanks for posting this.

    I don't know about the Market House gingerbread men as I have never had them and have nothing to compare with. This recipe is one I got last Christmas from the AP site. My cookies this year were a bust so I'm pretty dissapointed. I don't originally make icing, but am going to be doing that tomorrow to sweeten my cookies a bit. I'll just include the icing recipe here as well.

    ICING

    Ingredients:
    8 ounce powdered sugar
    4 drops lemon juice
    1 egg whiteInstructions:
    Be sure to wait to make the icing until just before you are ready to use
    it, as it hardens quickly.

    To make icing:

    1. Combine all ingredients in a large mixing bowl.
    2. Mix ingredients using a wooden spoon and beat until thick and fluffy.
    Be careful not to whip too thoroughly - the thicker the consistency, the
    quicker it hardens.
    For best results use a wooden spoon for mixing. You can use an electric
    beater but you must be careful that it does not become too thick.
    3. Spoon the mixture into a baker's bag or plastic bag with a small corner
    cut out to use for applying the icing.
    You can also use a butter knife to spread the icing.
    4. Apply the icing as needed to your gingerbread house.

    I made them. I got a lot! Like I divided the dough into fourths and put them in the fridge and one packet got at least 20 cookies (and I used fun sized cookie cutters). My dad loved them, they were a little bitter for me, unfrosted. I'm going to bake and frost the rest up and bring them to the hospital nurse's station and the fire department (or police station). The rest are going to Dad. Oh! But I did use whole wheat flour which made a nice dough.
