    What do you put on your latkas?

    I've heard so many odd things people put on there latkas and im curious just how weird this can get...

    i personally just like sugar, what about you?

    I usually go the sour cream route, but applesauce is good, too... just don't do both together.

    In honor of Andy Kaufman, I'd have my "Latkas" with a little..."Gravas"...and Simka on the side...

    I haven't had any latkes in a long time...

    Anybody want to make some for me?! I'd rather not get the instant variety from the kosher aisle...

    the instant are disgusting!

    my mom has the tradition of making sooo many this week that we wont even want them again until october!
    o... this week is soo my favorite!

    Potato Latkes

    A recipe for potato fritters.

    SERVES 6

    This is one of the most famous of Jewish foods and a specialty of Hanukkah. The latkes are served as an appetizer, as a side dish, and even for tea with a sprinkling of confectioners' sugar. They can be marvelous if properly prepared, just before eating.

    2 lbs (1 kg) potatoes
    2 large eggs
    Salt
    Oil for frying

    Peel and finely grate the potatoes. Put them straight into cold water, then drain and squeeze them as dry as you can by pressing them with your hands in a colander. This is to remove the starchy liquid, which could make the latkes soggy.

    Beat the eggs lightly with salt, add to the potatoes, and stir well. Film the bottom of a frying pan with oil and heat. Take serving-spoonfuls, or as much as 1/4 cup (50 ml), of the mixture and drop into the hot oil. Flatten a little, and lower the heat so that the fritters cook through evenly. When one side is brown, turn over and brown the other. Lift out and serve very hot.

    VARIATION

    You may add black pepper, chopped parsley, and finely chopped onion to the egg and potato mixture.

    Adding 4 tablespoons of potato flour binds the fritters into firmer, more compact cakes, easier to handle but not quite as lovely to eat.

    oh ok, I make those, they ar called hash browns with eggs LOL! cool
    but I never had sugar on them yuck!

    I love sour cream on mine, but occasionally go for the applesauce. this year my sis in law made them(hubys fam is christian, mine is jewish and sis in law is also marrying a jewish guy next year) so my neices had their first latkes and they thought they were hashbrowns and put ketchup on them, hehehee.

    Since I make my latkes with chives in them, I always use sour cream. If I get the latke from IHOP, I use applesauce because there's are a little sweet.

    NEVER USE INSTANT! Your bubbe would be horrified!
