    Enchiladas. I made them last night with shredded pork, rice, onions, olives, Trader Joe's sauce and for the first time I added a can of organic refried black beans, and they were amazing. I already make excellent enchiladas, but wow, those beans put them over-the-top.

    So basically I'm thinking about my rocking enchiladas.
