    Baking with Mickey.

    I recently acquired a new cookbook from my neighbor, a real gourmet chef. She was geting rid of some cookbooks, that while they were great, she has better. She probably has 4 to 5 hundred cookbooks. Anyways, when she saw this she thought instantly about me and sent it my way.



    I needed to make some cookies and decided to try the Gourmet Double Chocolate Chunk Cookies from the Main Street Bake Shop on Main Street USA at the Magic Kingdom. Here is the first batch.

    That was real nice of her to give you the cook book.
    and those cookies look delicious. and you have sort of a hidden mickey head.

    I used to have a Mickey cookbook (the first one they did). I never managed to figure out most of the recipes. I was like 20 at the time, and hadn't even heard of many of the ingredients. The cookies look great though!

    Here you are.

    1 cup butter
    1 tablespoon Brown Sugar
    1 cup white sugar
    2 large eggs
    ¼ teaspoon vanilla
    ¼ cup cocoa powder
    1 ½ cups flour
    ¼ teaspoon baking soda
    ¼ teaspoon salt
    1 ½ packages (18 ounces) semi-sweet chocolate chunks

    Preheat oven to 375
    Cream butter, sugars, vanilla and cocoa powder. Stir in remaining ingredients, blend well. Refrigerate for 30 mins.
    Drop dough by rounded teaspoonfuls onto an ungreased baking sheet. About 2 ins apart. Bake cookies until set (5 to 8 mins).

    Melonballer - do you think that milk chocolate would taste as good as the semi-sweet? Or would it make it too sweet?

    I just had that book in my hands yesterday. It was in the gift shop at Fort Wilderness.
    I might have to go back and get it.

    I have that cook book too! I is my favorite one, it is always on my kitchen counter. There are many great recpies that are very easy to make. That was very nice of her to give it to you.

    Volume one is no longer in production but is not very hard to find online. Also there is another current one (blue and white hard cover) sold all over the resorts on both coasts and at WOD in NY that is very good too.

    I usually only have semi-sweet chocolate chips on hand (it's what I prefer), so that is what I used. If you prefer milk chocolate, I'd say try it. But I experiment a lot with baking and don't mind a bad batch of cookies. However, I can't imagine that they would be awful.

    It's what Remy and Gusteau would do.

    The book has a ton of recipes from all over the resorts, including places like, Club 33, Blue Bayou, Narcoose's, Victoria and Albert, and more. There are no pictures though. Still its a fun book to go through. There are very simple to complex recipes. The Dessert section is big.
