Re: The CHICKEN & CHEESE Thread

The thread title made me decide what was for dinner at our house!

My daughter calls it "Chicken & Cheese & Shells & Peas" because, well, that's what it is!

We just make the Pasta-roni Shells & White cheddar and add to it around a cup or so cooked chicken cut up and about a cup of peas. Easy and yummy!
I love my awesome crazy wonderful friends!!

I haven't tried this one yet, but it looked good for using leftover turkey.

    Chicken and Stuffing Pie

    SERVINGS: 6-8
TIME: Prep: 20 min. Bake: 25 min.
    Ingredients:

    • CRUST:
    • 1 package (8 ounces) herb seasoning stuffing mix
    • 3/4 cup chicken broth
    • 1/2 cup butter, melted
    • 1 egg, beaten
    • FILLING:
    • 1 can (4 ounces) mushrooms, drained, reserve liquid
    • 2 tablespoons flour
    • 1/2 cup chopped onion
    • 1 tablespoon butter
    • 1 can (10 ounces) chicken gravy mix or 1 jar (12 ounces)
    • 1 teaspoon Worcestershire sauce
    • 1/2 teaspoon thyme
    • 3 cups cubed, cooked chicken
    • 1 cup fresh or frozen peas
    • 2 tablespoons diced pimento
    • 1 tablespoon parsley flakes

I make "ziploc" salads with those pre-cooked chicken chunks and pre-shredded cheese. There's no rhyme or reason to it. Throw in what I have. Haven't heard of any other chicken/cheese combos.

    Good morning, son
    In twenty years from now
Maybe we'll both sit down and have a few beers
And I can tell you 'bout today
And how I picked you up and everything changed
    It was pain
    Sunny days and rain
I knew you'd feel the same things...

I have a recipe for south of the border chicken that is really yummy. I'll see if I can find it so I can post.

Tonight for dinner I had chicken & cheese taquitos. They were pretty good!

2 chicken breasts for every can of condensed cream of mushroom soup.
    Cook 'em.
    Serve over rice.

(My husband and I put it in bowls with frozen peas and rice, mmm...)

You know what's good? This dish at Smokey Bones called the smokehouse chicken. It's a chicken breast lightly basted with BBQ sauce, then topped with cheese, bacon and onion straws. DELISH!

Cool Re: The CHICKEN & CHEESE Thread

Here's a good one you can do in a pinch. Let's say you have some leftover chicken and don't know what to do with it. Take our a tortilla put some chicken on it and some shredded cheese. Put it on a plate and put it in the microwave for about 35 seconds or so. Than take out some lettuce, tomato, avocado, (etc..whatever you have lying around). I like sour cream on my soft tacos so I put some on there. On the last occasion I did this there was some leftover bacon from breakfast that morning so I put some in there too.

    DELICIOUS & EASY!!
