Go six and spend the seventh at Universal Orlando. Even if you do not like or know anything about Harry Potter, the Wizarding World is something to be experienced.

Now mind you, I'm a bit of a fanatic. But if finances allow, how about 10-14 days? Trying to do Disneyworld too fast is like eating an extremely rich dessert in only one bite. It needs to be savored.
That said, I'd go for as long as I could reasonably afford. I've been several times, and I've never left without feeling there was more to see and do.

Re: How many days should I go?

I'm going for a 9 day trip sometime late July early August. It does make more sense to stay at a value hotel and get more days for what you would spend at a larger Disney hotel. I suspect you'll be staying on property but if not then ignore this part.

Remember the heat will be intense, the humidity will get you down. My mom is in her mid 60's so a trip to WDW with her now is out of the question during the summer months. We're going as a big family in late October early November. Cooler weather.

If your mom can handle the heat and sweaty nature of the parks during Summer then by all means take her during the summer. If her health is an issue I would suggest water breaks, water bottles with filters you can refill in the parks, heading indoors every hour to get air condition and shop to help pass the time during the heated hours. In and out is the key.

I have traveled with my mom before and it has always been during the Oct Nov Dec months. But traveling with your mom during the summer months is completely something that can be done. Just do it right. Her needs and wants always come first, as you should know this already.
