Mexican Riviera Shore Excursions... What To Do?

Okay, so... I'm going on a 7 day cruise to the Mexican Riviera in May. Aside from all the things there are to do on the boat (whichever boat that ends up being) I was looking into shore excursions and there seems to be more information than I know what to do with. Having never been to the Mexican Riviera myself and not really knowing what the excursions are all about I, again, turn to you for advice/opinion on the subject of which shore excursions to consider.

I imagine most cruise lines offer the same type of excursions and while were not totally committed to a particular cruise line yet I think its safe to say were gonna go with Royal Caribbean. I downloaded the available shore excursions from their website and it printed out 40-something pages of things to do. Will you help me narrow it down to a few MUST-SEE/DO's? Also, what are things we should avoid?

A little direction....
the thing that makes deciding so hard for me is that I like to do everything. I like adventure. I like relaxation. I like being physical. I like be lazy. I like getting dirty. I like being pampered. I like history and culture. I like taking risks. I would, however, like a good mix of things to do. I don't want to do the same type of activity at each port of call. I want variety. I want the "best of". Also, we don't drink so any activity that revolves around drinking (e.g. wine tasting, etc.) can be ruled out.

I'm going in March. The one thing we've done that we really enjoyed was a Zodiac Boat tour in Cabo San Lucas. They bring you really close to the shore, we saw a bunch of whales and the boat flat out hauls butt.

Both Puerto Vallarta and Mazatlan we visited beaches and enjoyed it.
