well yesterday was my first time that I ate at rancho..and all I know is if my grandmother would've saw what I ate she would've slap me slilly and throw away that food the minute it touched the table. The atmosphere is nice but that is it. and the so called "flan" it's nothing compared to what my mom's or late nana's flan.
If disney wanted some authentic mexican food they should let King Taco ( I don't know how people know about that restuarant, its basically good authentic tacos and rotaserie chicken) Im postive it would be successful because the food is good and most importatnly authentic.

Never eaten at Cocina Cucamonga so I don't know how the food is there. The other places are horrible. How can you burn Tortilla Soup? which is what happend the last time I ate at Tortilla Jo's. At Zocalo, I've never been impressed withthe food since it changed over from Casa de Frito. If one thing is lacking at DL it is a GOOD Mexican food place.
The atmosphere at Rancho is unbeatable. No, authentic Mexican it isn't. If you want authentic, look for the little cart on the corner run by an actual Mexican. THAT will be pretty dang tasty probably.
I've had much worse than Rancho at theme parks. It could definitely be better, but it is by far, not horrible food. Disney could really up the quality here and make a killing though. I'd recommend it for the atmosphere if you don't mind having less than the highest quality of food.
Our revels now are ended. These our actors, As I foretold you, were all spirits and Are melted into air, into thin air: And, like the baseless fabric of this vision, The cloud-capp'd towers, the gorgeous palaces, The solemn temples, the great globe itself, Yea, all which it inherit, shall dissolve And, like this insubstantial pageant faded, Leave not a rack behind. Well, if you want to enjoy the Rancho patio and drink in the smells of Mexican food around you, we always enjoy the Hacienda Chicken Caesar Salad at Rancho. You place your order with the person who makes it right in front of you, so you can request less dressing or to have an item omitted.
Disney's description: Grilled Chicken Breast, Romaine lettuce, Red Bell Peppers, Cotija Cheese, tossed with our own zesty Pepitas Caesar dressing and topped with crisp Tortilla Strips. (It doesn't taste zesty to me, despite their description.)

I wish people would consider that there is a lot more to this beautiful county than just the Disneyland Resort. Thank you for spending time outside the bubble, Yackerz, to explore the other areas of this wonderful area of California.
