Last inspection date listed in November. If they got closed down for "Lack of sanitary water supply or hot water" or "sewer system failure" or another one of the "You are CLOSED, right now! Everybody out!" gross violations, it more than likely won't get into the computer for a week to a month.
And if they are smart and something that would get them shut down happens, they voluntarily "Close For Remodeling" for a week to fix it before the Health Department gets wind of it. And their inspection records stay clean as a whistle.

And since someone mentioned discount coupons for guests at the hotels next door, it's a double scam - Charge a lot more to nick the tourists, and offer a discount (that really isn't) to the 'special customers' from the hotels. I'll bet even after the discount they are still higher than average.
And you can do an awful lot of remodeling with the store still open. Put up a divider wall and do one half of the dining room at a time, put in a scaffolding pedestrian tunnel and tarps and have at the exterior. They only really have to close to totally rip out the kitchen areas and rework them.
