Does anyone know where I can find an mp3 or wav of the background music from Journey to the Center of the Earth? Possibly a CD is availiable instead? etc...

Under Tributes, click Buddy Baker. There is a small clip. It must have been one of the last attractions he worked on. I have never been to TDS, but the music created is really good, it has the strong bold character like "From the Earth to the Moon" from Paris.
