At WDW there are many different princesses of different races (Mulan, Tiaana, Pocahontas.). I'm just curious - How is this handled in Tokoyo? Are the princesses Caucasian or are they Asian?

The princesses and any other face character at TDR are portrayed accurately.
Do they speak Japanese or do they speak English? Again - just curious as I'd love to visit some day.

SpoilerFace characters for meet and greets speak English. Performers are mostly from Australia and US.
Face characters that perform in entertainment (e.g. shows and parades) speak English or Japanese (usually lip sync) depending on the show.

Disney also ships the actors to other parks to help out. I knew a Mulan from Disneyland CA that was send to Tokyo Disney about 3 years ago so Disney ships them to other parks as well.
I have never seen Tiana in Tokyo.:( To be fair, though, I haven't seen Rapunzel, either. And I almost always go to DisneySEA rather than Tokyo Disneyland.
Where merchandising is concerned, however, Tiana was like a phantom. On the contrary, Rapunzel has/had a HUGE presence in the Disney Stores and all over Japan. Not so much the parks, though, at least not DisneySEA.
Mulan is not a princess. Neither is Alice, nor Wendy. Tiger Lily is, though. And so is Kida, who is my favorite because she is actually a leader who makes choices and guides her people. It's not just a token trope title for her.^^

Who are the most popular Princesses/Characters there? I know Duffy is huge, but as far as "traditional" charachters, who is on top of the list?
Mickey and Minnie of course. Donald and Daisy seem to be quite popular there too. Lots of the "furryheads" are very popular in Japan.
Mulan IS one of the "official" Disney princesses, I believe. The "official" list is: Snow White, Cinderella, Aurora, Ariel, Belle, Tiana, Rapunzel, Mulan, Pocahontas, and (if the current Disney merchandise booth at the NYC toy show is to be believed) Merida.

I heard all Disney Women/Girl characters are considered Princess even if they are not connected royalty just saying :p and yeah heard they ship cast members overseas to fulfull the the face characters.
