Okay, here's the deal. We're flying into Orlando in the morning, arriving around 10am or so...then hitting the parks after getting our stuff to the hotel..which park should we go to first? One that closes late? or one that doesn't have too much so we can go easy our first day, especially after the tiring airport craziness? Does anyone have suggestions?
Not just any parks to specify. I'm asking about Disney World parks.
Just do world showcase at Epcot. Get some coffee and some food. Take it easy.

What should the OP do if they like tea better?
I would just got to the one park that would close the latest in the day, and most times it is EPCOT, but sometimes it depends on the "Extra Magic Hour" nights.
There is plenty of good tea at Epcot.
Are you park hopping?
If so, then I'd go the take it easy route at the park of your choice, then hop over to EMH park for EMH time.
If not, then I'd take it as easy as possible in the park that has Extra Magic Hours. You'll obviously be wanting to end your day in this park, so w/o park hopping, you'll have to start your park day there as well. The time and how you go about your day is entirely up to you though. I'd say hit the parks immediately after dropping your stuff off, & burn off those anticipations you've developed while on the plane. Once that's done, it'll probably be around mid-afternoon, don't be afraid to leave the park and head back to the Resort for some rest until it's almost EMH time. Then head back to the park an hour or two before EMH time, with FastPasses in hand, and enjoy the FastPasses, then enjoy the EMH time you've paid for in your on-property stay.
That's how I'd do it. :)
On my trip in January, I'm not going to be landing at MCO until 7:30pm. :( I'm trying to decide to either eat at Ohana, or try to get as much EMH time as I'm able to be there for at DHS before it closes at 10pm.
