As for crowds... schools start going back around the end of August & early September, so that will help a little. Still expect at least moderate to heavy crowds though.

Weather... It'll be hot, humid and expect it to rain every day sometime between 3-6pm for about an hour. It's also close to peak hurricane season, but that shouldn't effect you much, but keep your eye on the Weather Channel regardless just to be safe.

Restaurants... I've only done a few sit-down ones. Kona Cafe at the Polynesian is excellent. I've had dinner and Breakfast there. Definitely do breakfast for the macadamia-pineapple pancakes. If you like the Pooh characters, try the Crystal Palace at MK. Decent buffet and good face time with Pooh & friends. Sometimes they have an awesome banana bread pudding with Bailey's sauce in the dessert area. Over at EPCOT, Le Chef's de France is great for lunch (I like the 3 course French Menu... plus little Remy is there right now entertaining lunch guests) and the Rose & Crown pub in the UK had great pub grub (if you like that sort of thing). Over at the Studios, 50's Primetime Cafe is a lot of fun and the food portions are HUGE! Never been to AK so can't help you there.

Hey I'm there 21st through Sept 4th, on counter service though, so can't help with the restaurants.

Re: traveling late august (weather-restaurant tips needed)

I usually travel during this time and I recommend it, since it's one of the most manageable times to travel based on crowds that I've seen.

It's hot and humid, but isn't intolerable either.

As far as restaurants, Le Cellier in Canada at EPCOT is a great place, as is the California Grill in the Contemporary, and Ohana in the Polynesian.

Restaurant Dining Menus from Walt Disney World

I would suggest that you look at the menus on the above site. It will give you a good idea of all the restaurants there are at Disney World. Only you know what type of food you like. The menus are sorted by location. So you can match the restaurants to where you will be on each day of your trip. Have fun planning.

Re: traveling late august (weather-restaurant tips needed)

    Welcome to MiceChat Carlos!

August will be so so so hot and humid! It's horrible The rain is nice because it breaks up the heat and humidity. Just bring an umbrella and do some indoor rides The rain usually doesn't last long. It's also pretty crowded. I went during that time once and swore I'd never go in the summer again. I'm going a month earlier this year. we'll see if it gets better!!
    Good morning, son
    In twenty years from now
Maybe we'll both sit down and have a few beers
And I can tell you 'bout today
And how I picked you up and everything changed
    It was pain
    Sunny days and rain
I knew you'd feel the same things...
