Looks like a fun trip. Makes me want to go back. WDW can definately be relaxing, if you don't let it all overwhelm you. Between Magic Express and the Busses, it's nice to have every responsibility taken care of for you.
You have to have a different mindset with Animal Kingdom, compared to other Disney theme parks. Take things slow, enjoy the atmosphere, and not enjoy more than the standard attractions.
The sushi place is called Teppan Edo. It has an amazing view of the Seven Seas Lagoon. Be sure to ask to sit by the window.
EDIT: Actually its called "Tokyo Dining" Ooops! Sorry about that! It is in the same building as the Teppan Edo place.

Unfortunately this is the only Disney hotel I have ever stayed at. Last time I was there I stayed in the Royal Palace (I think that's what its called).
