From our experience just chatting with restaurant cast members their hourly pay is in the low single digits. Their tips vary widely. Tips depend on where the guest is from. Guests from other countrys have very different tipping habits than americans. Then you have the guests on meal plans that still think that the gratuity is still included which it doesn't.
They have a tough job. We generally tip 20% for good service. The castmembers we know that work in the restaurants are not getting rich. They have great days and not so great days. Hopes this will help.

Yes I'd imagine that servers working at the premier restaurants make a very good amount of money given the occupation. I'd go so far as to say a good waiter at Cinderell'as Royal Table could make pretty close to 75k a year combining their salary and tips.
If we're talking Casey's Corner or even the Crystal Palace though, you're probably not going to make enough to make a living off of it.
